Corned Beef Reuben Roll-Ups

Happy St. Party's Day err I mean St. Patrick's Day! Find your green + pretend you're Irish! Gotta have some corned beef for St. Patrick's...right?! However the traditional corned beef + cabbage...not really my thing. Reuben's however, yeah I can get my Irish Jig on for that! These roll-ups have all the makings of a classic reuben [minus the swiss cheese--bleech!] all rolled up into a handy-dandy delicious + easy-to-grab crescent roll. 
mmmmm. tasty!

shredded pepper-jack cheese, sauerkraut, crescent rolls, thousand island dressing, sliced corned beef [+1 egg whipped for egg-wash]


roll out crescent rolls on a foil lined cookie sheet. layer each roll with dressing, corned beef, sauerkraut, and cheese. then roll'em up! brush with an egg wash for that pretty baked-sheen. sprinkle tops with s+p. bake @ 375 degrees for 8-11 minutes, or until tops are golden brown. 

grab + go! St. Patrick's Day festivities are calling!

Super Bowl Sunday ya'll!
had to show the Redskin love for 2 reasons;
1. we beat the super bowl champs. twice.
2. that was the best part of our entire season.
fail - hail!


good thing we're entertaining because that game was a snoozer.
not even one good commercial!
ok maybe one...

red robin lunch date? heck yes.

MAKE
 made sassy water...and looove it!
so refreshing :) 

2 liters water + 1 medium cucumber + 10-12 mint leaves
+ 1 lemon + 1 tsbp minced ginger

stir + let sit overnight or for at least an 8 hour period. 




Spinach + Artichoke Dip Stuffed Mushrooms


recipe:
2 containers of stuffing mushrooms, cleaned + stems removed
5-8 ounces of spinach + artichoke dip
1 cup shredded mozzarella cheese

place mushroom caps in casserole dish.
drizzle with EVOO and s + p.
cook mushroom caps in 375 degree oven for 8-10 minutes.
spoon spinach + artichoke dip into cooked caps and top with cheese.
cook for an additional 5 minutes- or until cheese is melted. 





delish. easy. low-calorie.

Jalapeno Popper Crescent Rolls


recipe:
2 cans Pillsbury Crescent rolls
2 jalapeno peppers, chopped w/ seeds removed
4 pieces of bacon, cooked + chopped
1 cup light cream-cheese
1 egg, whipped for wash



pre-heat oven to 350 degrees.
unroll crescent rolls onto greased foil covered cookie sheet.
cut each crescent roll in half.
spoon one teaspoon of cream cheese onto each triangle.
sprinkle each with bacon and a couple chunks of pepper.
tuck and roll + brush on egg wash.

bake for 10-12 minutes, or until tops are golden brown. 

yummy!!

1. Burt's Bees- is the bees knees. it's the king of all chapsticks in my personal [chapped-lip] opinion. makes your dry winter lips soft, moisturized, and smell/taste like honey. win-win! 2. I found a new moisturizer!! for someone who has ridiculously sensitive skin, you have no idea [you might] how exciting this is! it's organic, rich, moderately priced, annnd leaves your skin totally quenched and refreshed! 3. another skin-care find-->this Neutrogena face wash is fabulous. with grapefruit extracts it gently scrubs your face without being too harsh. once again- tried + tested + approved by this sensitive-skinned-lady :)

the little post that could

this is the 2nd edition of what was originally titled "finger food rules!"
2nd edition because...when trying to edit a photo I inadvertently deleted the entire post. [[GAHHH!!]]
holy frustration, batman. 
the cat was definitely judging me as I threw my technology-tantrum. 

If this was a live cooking show we'd definitely have a couple #$&@'s to bleep out 
+ would have to go to an immediate commercial break. 

but as they say in the biz...

The Mr. got home from his NC soccer tourney just in time for FOOTBALL on Sunday. 
[a moment of silence for Raven's fans...] 
we started a mini tradition this football season.
it's a little ditty we like to call FOOTBALL DINNERRRR!! [said in an echoing manly voice]
it's pretty simple. 
only one rule applies.
FINGER FOOD ONLY! 
finger food + football = couch potato laziness at its best!


here's what I came up with this weekend...




The Perfect Guac
[seriously, I've tried a lot of guacamole in my day]


Ingredients:
  • 4 avocados
  • 2 tbsp chili garlic sauce
  • 1 tbsp lemon juice
  • s + p
  • 1 tbsp celery salt
Directions:
  1. Cut and spoon out avocados into a medium sized bowl. 
  2. Mash with a fork until smooth[ish].
  3. Add remaining ingredients and stir until well-blended. 
  4. Grab your favorite chip and go in for a dip! boom!

Ranch-Cheeseburger Crescent Roll-Ups
:crescent rolls make for a fabulous foundation when coming up with creative finger foods:


Ingredients:


  • 1 can Pillsbury Crescent Rolls
  • 1/2 lb [lean] ground turkey
  • 1 cup cheddar cheese
  • 1 cup baby spinach
  • 2 tbsp [light] ranch dressing  
  • 1 egg [for wash]
  • 1 tbsp garlic powder
  • 1 tbsp worchestershire
  • s + p
Directions:
  1. Pre-heat oven to 350 degrees.
  2. Brown meat in pan over medium heat.
  3. Add garlic powder, worchestershire, and s+p to season.
  4. Remove from heat and empty meat into a medium-sized bowl. 
  5. Stir in ranch dressing and set to the side.
  6. Line a cookie sheet with foil and grease with non-stick cooking spray. 
  7. Pop open crescent rolls and lay them out on the cookie sheet.
  8. Begin layering each flat roll with 1-2 spinach leaves, 1 tbsp of meat mixture, and a sprinkling of cheese. Repeat on each crescent roll. 
  9. Carefully roll up each one. Trial and error worked best for me. [they do not have to look perfect!]
  10. Brush egg wash onto each roll-up. 
  11. Place in oven and bake for 9-11 minutes.
  12. Watch carefully! Remove when golden brown. [thank you, egg wash!]
  13. Let cool for 2-3 minutes before devouring :)
