Instagram - Week in Review 5

You got a minute? Ok maybe, five. 
Haven't gotten around to my weekly instagram post lately. Whoopsie.

A really important lesson I've been trying to hit home lately.

Ummmmm. kicking myself for not documenting this meal more. 
so easy + so good!
simmer one can of coconut milk, add one tsp of curry paste, one tbsp fish sauce, add veggies of choice [ I added shredded carrots, onions, and red bell peppers] and chopped chicken [or don't and keep it veggie-friendly] let simmer until veggies are tender and chicken is cooked through. 
serve over rice, like Uncle Ben's Ready Rice - Jasmine. top with chopped basil. YUM!

and picked up this outrageously good Gremolata EVOO. 
roasted some carrots with a couple of tbsps and little s + p. wow!
visit their site or stop by their adorable shop in downtown Frederick. 
do it.

so the Capitals are in the playoffs. 
my husband is ready. 
and my friends are supportive.

[Easy] Curry Risotto

Risotto is one of my most favorite comfort foods. However, I hardly ever make it because it is time-consuming, back-breaking work! All that stirring and pouring, and stirring and pouring-- yeah, not into it. I finally found a fool proof -EASY- way to make one of my favorite dishes + I'm thrilled about it! 


My girlfriends and I usually get together once a week [when we can] and do dinner, drinks and a lot of giggling. We all have different tastes [vegetarians and peskatarians alike], so when I host these gatherings I try to have a dish that everyone can alternate and customize, like this pizza party I had a couple of weeks ago. This risotto definitely did the trick thanks to all of the yummy toppings! 

it's easy because it's baked! cheyeah. 
[p.s. this is probably the fanciest piece of cookware I own.

[Easy] Curry Risotto 
adapted from O [Oprah] Magazine 
serves 4-6
  • 6 strips of bacon, chopped
  • 1 onion, chopped
  • 1 1/2 cups Arborio rice
  • 1/2 cup dry white wine
  • 4 cups water
  • 1 tbsp cumin
  • 1 tbsp cinnamon
  • 1 tbsp chili powder
  • 3 tbsp curry powder
  1. preheat oven to 400 degrees. using an oven safe, straight-sided saucepan or Dutch oven with lid, cook bacon over med-high heat. 
  2. when bacon is cooked through-remove bacon and let drain on a plated paper towel. reserve fat in pan, and add onion. cook until soft and see-through--about 3 minutes. 
  3. add rice and stir to coat well. stir in the wine and cook until it evaporates. [about 1 minute]
  4. add spices + salt and pepper to taste. stir in water and bring to a boil. 
  5. cover + bake for 20-25 minutes. check the risotto-- most of the liquid should be absorbed. 
serve immediately. choose your toppings [like all of them] and enjoy!

Crock-Pot Chicken Curry


oh if only the internet had a smell button.
i adore my crock-pot. it makes life so easy when it comes to meal planning! 
[[AND]] it fills your home with the most amazing, cozy,
mouth-watering fragrances to come home to.  


yesterday I made a delicious version of one of my favorite meals... chicken curry 
it's so simple, it's stupid
try it out- I dare ya!












Crock-Pot Chicken Curry


Ingredients:


  • 1 16-oz jar of medium chunky salsa 
  • 2 cups shredded carrots
  • 1 tbsp cinnamon
  • 1 tbsp cumin
  • 3 tbsp curry powder
  • 1 lb chicken thighs, skin removed 
  • 1 cup Greek yogurt 
  • pinch [or 2] of chopped parsley for garnish

Directions:
  1. Place chicken in crock-pot.
  2. In a medium bowl combine first 5 ingredients.
  3. Pour over chicken. 
  4. Cook for 6-8 hours on low.
  5. Turn off heat.
  6. Using tongs, remove chicken bones [that's right, it just falls off the bones!].
  7. Mix in Greek yogurt.
  8. Serve over rice, mashed-taters, or even grits! 
  9. Garnish with parsley.
